Angel’s family are the owners of San Vicente, a coffee export company in Pena Blanca, Santa Barbara. They are famous for connecting farmers in their community with roasters, and for bringing some of the best coffees in Honduras to the market.\u003cbr\u003e\u003cbr\u003eAngel has been working at San Vicente as quality control manager for many years and his passion for coffee is evident not only in his daily work but also when it comes to coffee farming. His farm el Guaco is located right next to Jobneel’s farm Finca el Vikingo, in el Sauce, Santa Barbara. Here Angel is growing a few different cultivars and he has a small and neat setup for fermenting, washing and processing his coffees.\u003cbr\u003e\u003cbr\u003eLast year he told me that he had built new raised beds placed under shade at the family mill in Pena Blanca where he is drying all his coffees. Since I started buying coffee from Finca el Puente, I have gradually developed a protocol in cooperation with Moises and Marysabel on how to separate, process and especially dry and store the coffees we buy from them. During that visit I was able go through his production steps to see if we could agree upon a protocol for him to follow in order to try to elevate the quality of his coffees. As usual there were many small details that could be improved, some with small and others with major impact on the final quality. A few of the major ones included separation of every daily picking, keeping each daily lot stored in air tight grain pro bags after drying. Drying the coffees under shade nets, keeping better control of the fermentation and slightly changing the process were also part of what we changed and improved. This meant that I was able to evaluate several samples, each representing a daily picking, instead of just 2-3 samples like previous years where the coffees had been bulked together.\u003cbr\u003e\u003cbr\u003eBy doing this we were able to remove the lower qualities from the higher quality lots and in combination with better processing and drying practices the coffees really cleaned up and became more expressive. We would of course not be able to change all this in such short time had it not been for the wonderful help and follow up done by Fantanesh Keleme and the whole team at Belco in Ethiopia, who made sure Khalid understood and followed the protocols for all the coffees he produced for us.\u003cbr\u003e\u003cbr\u003eWe also milled the coffees in a smaller dry-mill this year where we were able to also vacuum pack the coffees before export. The wet mill was completed in October 2023 and I was able to be there to oversee the first lot being processed at the new mill. It was very beneficial to be able to be there right at the start of the harvest. It meant that we could see the mill in use and uncover any risks and make a protocol on how we would like our coffees to be processed.\u003cbr\u003e\u003cbr\u003eWe asked Negussie to separate all daily pickings, to dry the coffees under shade nets and to store the coffees in air tight grain pro bags after drying, making sure every daily picking was properly marked.\u003cbr\u003eWe also agreed upon the processing protocol, ensuring good results by controlling fermentation and implementing soaking of the coffee after the mucilage was removed mechanically.\u003cbr\u003eAs soon as the coffees were dried, samples were sent to us in Oslo in order to be able to give feedback and evaluate the quality.\u003cbr\u003eThe harvest went really well much thanks to the help and follow up done by Fantanesh Keleme and the whole team at Belco in Ethiopia, who made sure Negussie was properly trained and followed the protocols for all the coffees he produced for us. In fact none of the washed coffees were rejected as all of them ended up tasting really good.\u003cbr\u003e\u003cbr\u003eThis year we were able to separate three of Negussie’s cultivars 74110, 74112 and 74140. They are all from seeds from the Jimma Agricultural research Center and are among the so called «new and improved» cultivars that now are commonly planted across Ethiopia.\u003cbr\u003e\u003cbr\u003eThis particular lot is a blend of 8 daily pickings of the cultivar 74112. I personally have found this to be quite similar to the 74110 cultivar in terms of flavour and is among the best cultivars Negussie grows.\u003cbr\u003e\u003cbr\u003eDespite having challeging weather conditions throughout the 2024\/25 harvest , Negussie was still able to produce a small amount of clean and tasty coffees with maybe slight lower flavour intensity than what the 2023\/24 season offered. For many years our friend and coffee farmer Gilberto Baraona planted a great selection of Pacamara on his farm and he was able to get numerous top 10 placements at the El Salvador Cup of Excellence before he passed away.
